  • Cut potato into four and serve with toppings of your choice.

  • Preheat oven to 190°C (375°F).
  • Clean and prepare potatoes as above.
  • Place the potatoes in the oven.
  • Cook for 1 hour.
  • Remove when cooked. Puncture potato and separate skin from flesh.

  • ½ teaspoon salt

  • 1 teaspoon dried basil

  • 1 teaspoon thyme

  • 14.5 ounces (411 g) canned tomatoes, diced or torn apart
