  • 1 kilo of beef tripe or oxtail (cut 2 inches long)

  • Option 3:
  • 1 kilo of a combination of all three (beef, tripe, and oxtail)

  • 3 cups of peanut butter

  • 1/4 cup grounded toasted rice

  • 1/2 cup cooked bagoong alamang (anchovies)

  • 2 pieces onions, diced

  • 2 heads of garlic, minced

  • 4 tablespoons atsuete oil

  • 4 pieces eggplant, sliced 1 inch thick

  • 1 bundle Pechay (Bok choy) cut into 2 pieces

  • 1 bundle of sitaw (string beans) cut to 2″ long

  • 1 banana bud, cut similar to eggplant slices, blanch in boiling water

  • 1/2 cup oil

  • 8 cups of water

  • Salt to taste

Directions

  • In a stock pot, boil beef, tripe, and oxtails in water for an hour or until cooked. Strain and keep the stock.
  • In a big pan or wok, heat oil and atsuete oil.
  • Sauté garlic, and onions until golden brown, then add the stock, toasted rice, beef, oxtail, and peanut butter. Bring to a boil and simmer for 15 minutes. Salt to taste.
  • Add the eggplant, string beans, pechay, and banana bud. Cook the vegetables for a few minutes. Do not overcook the vegetables.
  • Serve with bagoong on the side and hot plain rice.

      Burger steak is a dish that typically consists of a patty made of ground beef, shaped like a steak and cooked like a burger.

      Ingredients

      • For the Burger Patty:
      • 1/2 Kilo ground beef

      • 3 tbsp soy sauce

      • 4 tbsp chopped onion

      • 1/2 tsp pepper

      • For the Mushroom Gravy:
      • 2 tbsp oil (use the leftover oil from fried patties.

      • 2 1/2 tbsp all-purpose flour

      • 2 cups water.

      • 1 beef cube

      • 1 tbsp chopped onion

      • 1/2 cup mushroom buttons, sliced

      • a dash of ground pepper

      Directions

      • For the Burger Patty:
      • Combine ingredients in a bowl.
      • Get at least 1/4 cup of the mixture, roll into a ball then flatten using your palm.
      • Pan-fry the shaped mixture (do not overcook) and drain on a paper towel to remove excess oil.
      • For the Mushroom Gravy:
      • Heat cooking oil.
      • Saute onion and mushroom.
      • Add flour, and whisk using a wire whisk until no more lumps.
      • Add beef bouillon (or beef cubes) and ground pepper.
      • Simmer until the mixture thickens.
      • Pour the sauce over the fried patties.
      • Serve with mashed potato and/or white steamed rice.

      • 500g fresh egg noodles (miki)

      • 500g pork belly, sliced into thin pieces

      • 250g pork liver, sliced into small pieces

      • 250g pork intestines, cleaned and sliced into small pieces

      • 1 onion, diced

      • 4 cloves garlic, minced

      • 3 tablespoons fish sauce

      • 2 tablespoons cooking oil

      • 1 teaspoon ground black pepper

      • 2 liters of water

      • 2 pork bouillon cubes

      • 1/2 cup green onions, chopped

      • 1/2 cup crispy pork cracklings (chicharron)

      • 4 boiled eggs, sliced (optional)

      Directions

      • In a large pot, heat the oil over medium-high heat. Add the pork belly and sauté for about 5 minutes or until browned.
      • Add the pork liver, intestines, onions, and garlic. Sauté for another 5 minutes.
      • Pour in the water, fish sauce, and pork bouillon cubes. Bring to a boil, then reduce heat to low and let simmer for 30 minutes.
      • Add the fresh egg noodles to the pot and let cook for about 5 minutes or until tender.
      • Season with black pepper to taste.
      • Serve hot with chopped green onions, crispy pork cracklings (chicharron), and boiled eggs (if desired).

      Notes

      • If you can’t find fresh egg noodles (miki), you can use dried noodles instead. Cook the dried noodles according to the package instructions before adding them to the soup. You can also adjust the amount of pork and pork organs to your liking. Some people prefer pork liver while others prefer pork belly.
