Ingredients

  • 1 Kilo chicken wings, split at the joint, tips removed

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 cup all-purpose flour

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1/2 tsp cayenne pepper (optional, for extra heat)

  • 1/2 cup unsalted butter

  • 1/2 cup hot sauce (such as Frank’s RedHot)

  • 1 tbsp white vinegar

  • 1/2 tsp Worcestershire sauce

  • Vegetable oil for frying

  • For serving:
  • Celery sticks

  • Blue cheese dressing

Directions

  • Mix the flour, paprika, garlic powder, cayenne pepper, salt, and black pepper in a large bowl. Add the chicken wings and toss to coat evenly.
  • Heat the vegetable oil in a large pot or deep fryer to 190°C (375°F).
  • Carefully add the chicken wings to the hot oil and fry for 10-12 minutes or until crispy and golden brown. You may need to fry the wings in batches to avoid overcrowding the pot.
  • While the wings are frying, make the sauce. Melt the butter in a saucepan over medium heat. Add the hot sauce, vinegar, and Worcestershire sauce. Stir well and remove from the heat.
  • Once the wings are done, use a slotted spoon to remove them from the oil and transfer them to a paper towel-lined plate to drain any excess oil.
  • Pour the sauce over the wings in a large bowl and toss to coat evenly.
  • Serve the wings hot with celery sticks and blue cheese dressing on the side for dipping.

Ingredients

  • For the Fried Chicken Wings:
  • 1/2 kg chicken wings

  • 2 cups cornstarch

  • Salt and pepper, to season

  • For the Soy Garlic Glaze:
  • ½ cup light soy sauce

  • 4 cloves garlic, peeled and minced

  • 1/2 teaspoon garlic powder

  • ¼ small onion, shredded

  • 1-inch ginger, peeled and shredded

  • 1 teaspoon cornstarch

  • ¼ cup mirin

  • 2 tablespoons brown sugar

  • White sesame seeds, for garnish

Directions

  • For the Fried Chicken Wings:
  • Pat dry the chicken wings with paper towel.
  • Season with salt and pepper then dredge chicken in cornstarch.
  • Deep fry until cooked all the way through.
  • Place on paper towel to drain excess oil and allow to dry.
  • For the Soy Garlic Glaze:
  • Combine onion, garlic, soy sauce, mirin, brown sugar, garlic powder and ginger in a saucepan.
  • Place over low-medium heat and stir until sugar is fully dissolved.
  • In a small bowl, place cornstarch and a tablespoon of the soy-garlic mixture. Mix to dissolve.
  • Add to the saucepan and stir until slightly thickened.
  • Combine:
  • Toss chicken wings in glaze.
  • Sprinkle with sesame seeds before serving.
