  • ¼ ea. onion, finely chopped (optional)

Directions

  • Preheat oven to 425 °F (218 °C). Grease an 8-inch (20 cm) baking pan.
  • Combine cornmeal, flour, baking powder, salt, and sugar in a large mixing bowl.
  • Add egg, milk, and shortening.
  • Beat until fairly smooth (about a minute).
  • If using corn and/or onion, fold in these ingredients.
  • Pour the mixture into the baking pan.
  • Bake for 20–25 minutes or until a toothpick inserted in the center comes out clean. If corn is added to the batter, increase the time by ~50%
  • Serve hot!

  • 1 teaspoon baking soda

  • ¾ cup (180 ml) water

Directions

  • Make the dough by kneading together all the ingredients and sufficient water (this will be approximately ¾ cup but some judgement is required).
  • Wrap the dough in a damp muslin cloth and leave it to rise for 2–3 hours.
  • Divide the dough into small balls.
  • Roll out the balls in oblong or round shapes with a rolling pin or by slapping and stretching with your hands.
  • Smear the surface with water and bake in a tandoor or preheated oven (as hot as your oven will go).
  • The naans should puff up a little, and be ready to remove from the oven in 4–5 minutes.

  • 1 cup brown sugar or muscovado sugar

  • Pandan leaves (optional, for flavoring)

Directions

  • In a mixing bowl, combine the glutinous rice flour and water to make a dough. Knead until the mixture forms a smooth ball.
  • Pinch small portions of the dough and roll them into small balls, about 1/2 inch in diameter.
  • Bring a pot of water to a boil. Drop the glutinous rice balls into the boiling water and cook until they float to the surface. Remove the cooked rice balls from the water and set aside.
  • In a separate pot, combine the coconut milk, brown sugar or muscovado sugar, and pandan leaves (if using). Heat the mixture over medium heat, stirring constantly until the sugar is fully dissolved and the coconut milk is heated through. Do not let it boil.
  • Remove the pandan leaves from the coconut milk mixture.
