  • 1 cup whole milk

  • 2 cups heavy cream (> 35% fat)

  • 1/2 cup sugar

  • 1/8 tsp fine sea salt

  • 5 large egg yolks

  • 1 vanilla bean (cut lengthwise and scrape seeds)

Directions

  • In a large bowl with a flat surface, prepare an ice bath. Set aside.
  • Pour the heavy cream into a mixing bowl and place it into the large bowl with an ice bath.
