  • 2 cups all-purpose flour

  • 2 tbsp paprika

  • 1 tbsp salt

  • 1 tbsp dried thyme

  • 1 tbsp dried basil

  • 1 tbsp dried oregano

  • 1 tbsp celery salt

  • 1 tbsp dried mustard

  • 1 tbsp pepper

  • 4 cups vegetable oil

  • 8 pieces chicken, rinsed and dried

  • 2 cups buttermilk

  • 2 large eggs

Directions

  • In a large bowl, mix together the flour and all the spices.
  • In a separate bowl, beat the buttermilk and eggs together.
  • Heat the vegetable oil in a large heavy skillet over medium-high heat.
  • Dip each chicken piece in the buttermilk mixture, then roll in the flour mixture to coat.
  • Fry the chicken in the hot oil until golden brown, about 10 minutes on each side.

What is Pochero?

Puchero is a type of stew originally from Spain, prepared in Yucatán, Mexico, Argentina, Paraguay, Uruguay, Perú, south of Brazil, the Philippines, and Spain, specifically the autonomous communities of Andalusia and the Canary Islands. The Spanish word “puchero” originally meant an earthenware pot, before being extended to mean any vessel, and then the dish cooked in it.
The dish is essentially equivalent to the cocido of Spain but lacking colorants (such as paprika), using local ingredients which vary from one region to another. In Spain chickpeas are widely used. Puchero, cocido, and the sancocho eaten in Colombia, Ecuador, Dominican Republic, Venezuela and Puerto Rico, are essentially similar dishes.
In Philippine cuisine, puchero (Spanish: Pochero; Tagalog: putsero) is a dish composed of beef chunks stewed with saba bananas (or plantains). The dish may also include potatoes or sweet potatoes, chorizos de Bilbao, bok choy, leeks, chickpeas, cabbage and tomato sauce. Other versions replace beef with chicken or pork.

This Chicken Pochero Recipe is a warm and hearty stew that everyone in the family will love.

Ingredients

  • 2 Tbsp oil

  • 1 1/2 tsp garlic, chopped

  • 1/3 cup onion, red, chopped

  • 1 pc chicken, whole (approximately 1-1.3 kg), cut into quarters

  • 1 1/2 Tbsp patis

  • 1 pouch DEL MONTE Original Style Tomato Sauce (200g)

  • 1 2/3 cup water

  • 3/4 cup sweet potato/kamote, cut into quarters

  • 1 2/3 cup banana, saba, cut diagonally

  • 3/4 cup green beans, sliced into 2

  • 1 1/2 can pork and beans (230g)

  • 3/4 cup pechay Tagalog

Directions

  • Heat oil. Sauté garlic and onion for 5 minutes.
  • Slightly brown the chicken on all sides. Add patis, cook until dry.
  • Add DEL MONTE Original Style Tomato Sauce and water. Cover and simmer for 20 minutes. Stir occasionally.
  • Once chicken is cooked, add kamote and simmer over medium heat until kamote is tender.
  • Add saba, green beans and pork and beans then simmer for 5 minutes.
  • Add stalks of pechay, once cooked, add pechay leaves and turn off heat.

Notes

  • This Chicken Pochero dish is an excellent source of vitamin A that helps improve vision and keeps the immune system healthy. It also has niacin that helps enzymes work properly in your body.
  • Separate the stalks and leaves of the pechay. The stalks will cook longer than the leaves. Add the stalks first. When cooked, add the leaves and let the residual heat cook the leaves.

Ingredients

  • 2 kilos chicken, your choice cuts

  • salt and pepper

  • cooking oil for deep frying

  • Breading
  • 1 cup all-purpose flour

  • 1 cup cornstarch

  • 1 Tbsp. five spice powder or ngohiong powder

  • 1 Tbsp. garlic powder

  • 1 tsp. fine salt, adjust if necessary

Directions

  • Put the chicken pieces in a bowl and season with salt and pepper. Rub and press each chicken with the salt and pepper so all the pieces is evenly coated.
  • Prepare the breading. In a mixing bowl, combine flour, cornstarch, five spice powder, garlic powder and salt.
  • Stir the dry ingredients using a fork until all the ingredients are evenly mixed.
  • Heat the oil in the deep fryer or deep frying pan for about 175°C.
  • Coat a piece of chicken with the breading inside and out. Coat underneath the skin as well.
  • Do it by pressing each chicken with the breading then shake off excess breading and fry it.
  • Depending on the size of your fryer and the size of your chicken, you can put 4 to 5 pieces per batch.
  • Just don’t overcrowd the fryer to avoid the fried chicken to become soggy and loose it’s crispiness.
  • Cook it for about 15 to 20 minutes in medium heat.
  • Put the chicken in a paper towel or a rack to drain the excess oil.

Tinolang Manok (Chicken Tinola or Chicken Ginger Stew) is a healthy and delicious Filipino dish. Tinolang Manok can be traced back to the Spanish colonial period. This dish is a very common entrée in  Filipino dining. Chicken, papaya, chili leaves, and spices, are sautéed and boiled until tender.

Tinolang Manok, a classic Filipino dish, is very easy to cook. Start by preparing the ingredients, then sauteeing ginger, onions, garlic, chicken, and papaya. Add water, boil and simmer until the chicken and papaya are tender. Add chili leaves right before the dish cooks.

Dark meat cuts of chicken, when used, make a tastier Tinolang Manok. They add more chicken flavor to the dish. Dark meat comes from the thigh and drumstick (the legs of the bird).

Sayote can be used instead of Green papaya. Malunggay leaves may be used instead of “dahon ng sili”. Some people combine both leaves too!

Ingredients

  • 1 kilo whole chicken, cut into pieces.

  • 1 small young papaya or sayote, cut into small pieces.

  • 2 tablespoons ginger, crushed and slliced into strips

  • 1/2 cup dahon ng sili (chili leaves) or malunggay leaves

  • 1 liter of water

  • 5 garlic cloves, minced

  • 1 red onion, diced

  • 4 tablespoons oil

  • 2 tablespoons patis (fish sauce)

  • 2 to 3 pieces siling haba (optional)

Directions

  • In a stock pot, heat oil and sauté garlic, onion, and ginger.
  • Add water and the chicken.
  • Bring to a boil and simmer for about 20 minutes or until the chicken is almost done.
  • Season with patis.
  • Add papaya and continue to simmer for an additional 5 minutes or until papaya softens but is not overcooked.
  • Add sili leaves (and/or malunggay leaves) then turn off the heat.
  • Add siling haba prior to serving.
  • Serve steaming hot in a bowl with plain rice on the side.

And that is even though both dishes include curry and chicken. Different variants render their distinct taste and presentation. The flavors of chicken curry are pretty much the same.   • 1 Kilo chicken cut to pieces

  • 2 to 3 pieces of potatoes, quartered

  • 2 to 3 pieces of carrots, cut into pieces

  • 1 big red bell pepper cut into 1″x1″ squares

  • 1 big green bell pepper cut into 1″x1″ squares

  • 2 mid-sized onions, chopped

  • 1 bulb of garlic, minced

  • 1 thumb-sized ginger, pounded then sliced

  • 2 cups coconut milk

  • 2 to 3 tablespoons of curry powder

  • 1 teaspoon chili powder or minced chili (optional)

  • 4 tablespoons cooking oil

  • Salt and pepper to taste

Directions

  • In a frying pan or wok, fry the cut chicken until light brown. Next, fry potatoes and carrots, and set them aside.
  • In a saucepan, sauté garlic, onions, and ginger in cooking oil for 2 minutes.
  • Add the chicken, coconut milk, curry powder, and chili powder. Simmer for 10 minutes.
  • Add potatoes and carrots and continue to simmer for another 5 minutes or until tender.
  • Add red and green bell pepper, salt (about 1 tablespoon), and pepper to taste.
  • Serve hot with steamed rice.

Notes

  • Coconut milk may be canned from the grocery store. When using fresh coconut, milk grated coconut meat with 1/2 cup of water, then set aside. Again, milk the grated coconut milk for the second time using 1 1/2 cups of water. While cooking, use the 2nd milking first, then add the first coconut milk near the end of cooking, just after putting the potatoes and carrots.
  • Use fish sauce (patis) instead of salt when available.

This is an easy to make soup recipe with egg noodles and chicken meat in hot chicken broth.

Ingredients

  • 1 Kilo egg noodles

  • 6 cups water

  • 1/2 Kilo chicken breast, (shredded roasted chicken (lechon manok) may also be used)

  • 1 chicken broth cube

  • 1 tablespoon soy sauce

  • 2 tablespoon fish sauce

  • 1 teaspoon ground black pepper

  • 1-2 stalks spring onions – chopped

  • 1 small carrot – cut into thin strips

  • 2 cups shredded cabbage or iceberg lettuce

Directions

  • Using a deep pan or pot, bring water to a boil.
  • If using fresh chicken breasts, remove the chicken bones and slice as thin as possible.
  • Add chicken breasts or shredded roasted chicken, soy sauce, fish sauce and chicken broth cube then cover and simmer until meat is cooked for about 20-30 minutes. (If using roasted chicken, simmer about 10 minutes only).
  • Lower heat to low just to keep the broth hot but not boiling.
  • Add the noodles and cook for 5 minutes.
  • Divide the cooked noodles into 4 large bowls.
  • In each bowl, add chicken meat, chopped lettuce/cabbage, carrot strips, spring onions and toasted garlic.
  • You may add hard boiled eggs if you like.
  • Serve it hot and enjoy!

There are many ways to prepare fried chicken. This easy vinegar fried chicken recipe is one of the simplest and easiest ways to prepare fried chicken.

Ingredients

  • 1 kg chicken, cut into serving pieces

  • ½ cup vinegar

  • ½ tsp ground black pepper

  • ½ tsp red chillies, minced

  • 1 ½ cups flour

  • 2 eggs

  • salt, to taste

  • cooking oil, for deep frying

  • For the Sauce:
  • 1 cup vinegar

  • 2 tbsp sugar

  • 5 cloves garlic

  • 1-2 pcs red chilies

  • Salt and ground black pepper, to taste

Directions

  • In a large bowl, combine vinegar, black pepper, minced red chillies and salt to chicken.
  • Mix well to incorporate. Cover and marinate for about 3 hours and set it aside inside the fridge.
  • After 3 hours, remove chicken from the marinade and discard excess vinegar.
  • Take 2 eggs and beat in a bowl. Set aside.
  • Add flour in another bowl. Set aside.
  • One at a time, dip chicken pieces in eggs, let drip and roll into flour.
  • Deep fry chicken in very hot cooking oil until golden brown.
  • Prepare the dipping sauce by mixing all ingredients together in a bowl. Adjust the red chilies according to your preferred spiciness.
  • Serve with vinegar dipping sauce on the side. You can also serve this with coleslaw as a side dish.

Chicken Pastel is a traditional savory casserole dish originating in the Philippines.

Chicken Pastel or Pastel de Pollo in Spanish, is the Filipino version of the Chicken Pot Pie or empanada without the pie crust.

The chicken in the pastel recipe may be replaced with any kind of meat, including pork or duck.

There are many variations of the dish depending on the region. Filipino families even often have their own interpretations. In nearly every version of the dish, the main ingredients are diced chicken meat and sausages. Chorizo sausages are commonly used, but hot dogs or vienna sausages could be substituted for real sausage.

Filipinos often eat this dish with rice. Many Filipino foods have Spanish or Mexican roots but the influx of Chinese settlers inspired the use of rice in Filipino cooking. That is why a lot of the European foods that were introduced to the Philippines were adapted to the traditional rice and viand mixes.

Ingredients

  • 2 lbs chicken breast cut into cubes

  • 1 piece Knorr Chicken Cube

  • 1 piece Chorizo de Bilbao sliced

  • 4 pieces hotdogs sliced

  • 1 piece potato cubed

  • 1 piece carrot sliced

  • 1 piece red bell pepper sliced

  • 1 piece green bell pepper sliced

  • 3/4 cup button mushroom sliced

  • 15 ounces all-purpose cream

  • 1/4 cup soy sauce

  • 1 piece lime

  • 1 piece onion chopped

  • 4 cloves garlic minced

  • 3/4 cup water

  • Salt and ground black pepper to taste

Directions

  • Combine chicken, soy sauce, and lime in a large bowl. Mix well. Marinate chicken for at least 30 minutes.
  • Heat oil in a cooking pot. Saute onion and garlic.
  • Once the onion softens, add the chorizo. Saute for 1 minute.
  • Put chicken into the pot. Saute until the color turns light brown.
  • Add water. Let boil.
  • Add Knorr Chicken Cube. Stir. Cover and continue to cook for 20 minutes.
  • Put the sliced hotdogs into the pot. Cook in medium heat until the liquid reduces to half.
  • Add potato and carrot. Pour-in all-purpose cream. Cover and cook for 8 minutes.
  • Stir-in the mushroom and bell peppers. Stir. Cook for 3 minutes.
  • Season with ground black pepper and salt.
  • Transfer to a serving plate. Serve with warm rice. Share and enjoy!

Ingredients

  • 3 cloves garlic

  • 1 medium sized red onion

  • 3 medium sized ripe tomatoes

  • 1/2 kilo pre-cut chicken

  • 1 cup water or chicken stock (unsalted)

  • Salt and pepper to taste

  • 3 medium sized potatoes

  • 1 small carrot

  • 1/2 cup evaporated milk

  • 200 gms. pineapple tidbits

  • 100 ml tomato sauce

  • 1/4 cup grated cheese (optional)

Directions

  • Saute garlic, onion and tomatoes in 1 tbsp. oil in a medium heat pan. Cook until tomatoes turn soft.
  • After washing and draining chicken put it in the pan together with the sauteed garlic, onion and tomatoes.
  • Add salt and pepper according to taste.
  • Pour 1 cup water or chicken stock and cover pan and let simmer for 3 minutes.
  • Add potatoes and carrots together with tomato sauce. Cover pan until potatoes and carrots are tender.
  • Add milk and cheese (optional) and let it simmer for another 5 mimutes then serve.
  • Best served with steamed rice.
