Ingredients

  • * 2 Kilos beef shanks

  • * 1 large onion, quartered

  • * 4 cloves garlic, crushed

  • * 2 thumb-sized ginger, sliced

  • * 1 large carrot, cut into 2-inch pieces

  • * 1 large white radish (daikon), cut into 2-inch pieces

  • * 1 bundle bok choy (pechay), cut into 2-inch pieces

  • * 1/4 cup fish sauce (patis)

  • * 6 cups beef broth

  • * Salt, to taste

  • * Pepper, to taste

Directions

  • In a large pot or Dutch oven, combine the beef shanks, onion, garlic, ginger, carrot, radish, and beef broth. Bring the mixture to a boil, then reduce the heat to low and simmer for 2-3 hours, or until the beef is tender and the broth is flavorful.
  • Remove the beef shanks from the pot and set aside. Strain the broth through a fine-mesh sieve and discard the solids. Return the broth to the pot and bring it to a boil.
  • Cut the beef shanks into smaller pieces and add them back to the pot along with the bok choy. Simmer for an additional 5-10 minutes, or until the vegetables are tender.
  • Season the bulalo with fish sauce, salt, and pepper to taste. Serve the bulalo hot, garnished with chopped green onions if desired. Enjoy!

What is Pochero?

Puchero is a type of stew originally from Spain, prepared in Yucatán, Mexico, Argentina, Paraguay, Uruguay, Perú, south of Brazil, the Philippines, and Spain, specifically the autonomous communities of Andalusia and the Canary Islands. The Spanish word “puchero” originally meant an earthenware pot, before being extended to mean any vessel, and then the dish cooked in it.
The dish is essentially equivalent to the cocido of Spain but lacking colorants (such as paprika), using local ingredients which vary from one region to another. In Spain chickpeas are widely used. Puchero, cocido, and the sancocho eaten in Colombia, Ecuador, Dominican Republic, Venezuela and Puerto Rico, are essentially similar dishes.
In Philippine cuisine, puchero (Spanish: Pochero; Tagalog: putsero) is a dish composed of beef chunks stewed with saba bananas (or plantains). The dish may also include potatoes or sweet potatoes, chorizos de Bilbao, bok choy, leeks, chickpeas, cabbage and tomato sauce. Other versions replace beef with chicken or pork.

This Beef Pochero Recipe is a warm and hearty stew that everyone in the family will love.

Ingredients

  • 2 Tbsp oil

  • 1/4 cup onion, red, sliced

  • 350 g beef, round, cut into serving portions

  • 3 cups water

  • 1 pouch DEL MONTE Filipino Style Tomato Sauce (200g)

  • 120 g potato, cut into chunks

  • 2 pcs banana, saba, semi-ripe, peeled and sliced diagonally

  • 1/4 cup garbanzos, cooked

  • salt, to taste

  • pepper, to taste

  • 2 bunch pechay Tagalog

Directions

  • Sauté onion and beef for 5 minutes. Add water and DEL MONTE Filipino Style Tomato Sauce. Bring to a boil, cover and simmer over low heat until beef is almost tender.
  • Add potatoes, saba, and garbanzos. Season with salt and pepper to taste. Simmer for 10 minutes or until potatoes and saba are tender.
  • Add pechay. Simmer for 5 minutes or until pechay is cooked.

Notes

  • This Beef Pochero dish is rich in iron for making red blood cells that carry oxygen around the body. It is also rich in vitamin A which promotes normal growth and development.
  • Choose relatively cheaper cuts of beef that are tougher and have connective tissue or “litid” like round, kenchi, or even kalitiran. When cooked slowly, these beef cuts turn tender and the “litid” melts in your mouth.

This easy Beef Salpicao recipe is basically a Filipino dish.  Even with the foreign-sounding name, many will think that this must be Portuguese cuisine introduced during the times when the Philippines was a colony of Spain.  According to the sausage wiki, salpicao is a traditional Portuguese sausage which by the way the dish is not. The Filipino Beef Salpicao is a garlicky stir-fried dish.

Salpicao (Portuguese) is a beef or pork sausage flavored with garlic and paprika.  Salpicado (salpicar), on the other hand, is a Spanish word that means splatter, sprinkle, dabble, or pepper.  Since the dish is splattered with lots of garlic, could salpicao be just a derivative of salpicado?

Beef salpicao is very delicious.  It is salty and sweet with the smell and taste of garlic.  It is as if the flavor was produced by too many spices although salpicao has very few ingredients that are readily available anywhere. It is a quick stir-fry dish with a very simple and uncomplicated cooking process.  It is a perfect main dish but is also good as cocktail food, what we call in the Philippines as “pulutan” (appetizer taken with alcohol, like beer).

As a main dish, Beef Salpicao could be paired with Buttered Corn and Carrots.

Beef salpicao is very delicious.  It is salty and sweet with the smell and taste of garlic.

Ingredients

  • 1 kilo beef sirloin, cut into 1-inch cubes

  • 1/4 cup Worchestershire sauce

  • 1/4 cup soy sauce

  • 1 tsp brown sugar

  • 1/4 tsp red chili pepper flakes

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 1 head garlic, peeled and minced

  • salt and pepper to taste

Directions

  • Combine beef, salt, and pepper. Marinate for about 10 minutes.
  • Combine Worcestershire sauce, soy sauce, brown sugar, and red chili pepper flakes. Whisk until sugar is dissolved. Set aside.
  • In a cast-iron wok over medium heat, add butter and oil. When butter begins to melt, add garlic. Cook, stirring regularly, for about 1 minute or until garlic lightly browns.
  • Increase heat to high and stir garlic continuously to prevent it from burning. Add beef and spread it across wok when the wok is very hot. Allow to sear for about 1 to 2 minutes and then turn to sear on other side.
  • Add Worcestershire-soy sauce mixture and continue to cook, stirring regularly, for about 3 to 5 minutes. Serve hot.

This easy Ampalaya Con Carne recipe is a basic stir-fry dish using beef and ampalaya (bitter melon, bitter gourd) as the main ingredients.

Ingredients

  • 1 large ampalaya, cleaned and sliced

  • 250 g beef sirloin, thinly sliced

  • 1 tbsp cornstarch

  • 1/2 cup soy sauce

  • 1 tbsp sesame oil

  • 1 medium onion, thinly sliced (lengthwise)

  • 1 small thumb ginger, julienned

  • 6 cloves garlic, minced

  • 1/4 tsp salt

  • 1/2 tsp ground black pepper

  • 1 cup water (more if necessary)

  • 5 tbsp cooking oil

Directions

  • In a bowl, combine the beef strips, soy sauce, salt, ground black pepper, cornstarch, and sesame oil.
  • Mix all the ingredients until evenly distributed and marinade for at least 1 hour.
  • Heat a frying pan or wok and pour 3 tbsp of the cooking oil.
  • When the oil is hot enough, stir fry the marinated beef, in medium heat, for about 3 to 5 minutes per side or until the outer part turns medium to dark brown.
  • Add water and simmer until the beef is tender.
  • Heat a separate pan or cooking pot then pour in the remaining 2 tbsp of cooking oil.
  • When the oil is hot enough, sauté the garlic, onion, and ginger.
  • Add- in the sliced ampalaya then stir fry for about 5 to 8 minutes.
  • Turn off the heat and transfer to the pan with the beef.
  • Stir and cook for another 2 to 3 minutes.
  • Remove from heat and transfer to a serving plate. Enjoy!

  • Serve with plain rice or garlic fried rice with a bowl of the beef broth.

This Easy Beef Broccoli Recipe is a must-try! Beef Broccoli is a favorite choice when eating in Chinese restaurants. The taste of tender beef and the health benefits of nutritious broccoli makes it a no-brainer when choosing from the menu.

Ingredients

  • 1 KG beef, sliced into strips

  • 1/2 KG broccoli, sliced

  • 1 beef broth cube

  • 4 tbsp oyster sauce

  • 2 tbsp soy sauce

  • 2 cups water

  • 1/2 head garlic, minced

  • 1 medium size onion, chopped

  • 1 tsp ginger, minced (optional)

  • Salt and pepper

Directions

  • In a pot, boil the broccoli for about 3 minutes.
  • Remove broccoli from water and set aside.
  • In a casserole, place the beef then season with salt and pepper.
  • Boil the beef in 2 cups of water until tender.
  • Add water if necessary. Remove from the broth and set aside (reserve the broth for later).
  • In a saucepan, saute the onion, the garlic, and the beef.
  • Stir- fry for a few seconds then add 1/2 cup of the broth.
  • Add the oyster sauce, the soy sauce, and the beef broth cube and stir fry until the sauce thickens.
  • Add the broccoli and stir fry for a few seconds then serve hot. Enjoy!
