Ingredients

  • 1/2 Kilo pork lungs

  • 1/2 Kilo pork heart

  • 5 cups of radish (labanos) (cubed)

  • 2 large bell pepper (diced)

  • 2 medium size onion (chopped)

  • 6 medium size tomato (diced)

  • 2 medium carrot (diced)

  • 1 cup vinegar

  • 1/4 cup annatto powder

  • 8 cloves garlic (chopped)

  • 8 siling (hot chili) labuyo (sliced)

  • 1 tsp paprika (optional)

  • 4 pcs bay leaf

  • canola oil

  • salt or fish sauce (patis) to taste

  • pepper to taste

  • Broth

Directions

  • Rinse pork heart and lungs, boil for 35-45 minutes or until tender.
  • Cut pork heart lungs into small cubes (ideally the same cut as for the radish).
  • Heat oil and saute garlic, onion tomato, add bay leaf and paprika.
  • Add pork lungs and heart, pour vinegar (do not stir).
  • Lower heat to low until vinegar is cooked (taste sauce if vinegar is cooked).
  • Add radish, carrots, red bell pepper, chili, pepper and salt or patis.
  • Add the broth, cover and simmer until desired amount of sauce.

    Ingredients

    • 1 Kilo pork butt or belly (if using pork belly remove the skin)

    • 1 Cup soy sauce

    • 1 whole garlic peeled & smashed

    • 1 small onion, minced

    • 2 lemons

    • 1/2 Cup of 7-UP

    • 1 TSP ground black pepper

    • 5 TBSP dark brown sugar

    • 1 Cup banana catsup

    Directions

    • Soak bamboo skewers in water overnight to avoid splitting and burning before using.
    • Cut pork into ½ thick x 1 inch wide x 1 ½ inch long pieces.
    • Slide pork onto skewers and set aside.
    • In a large bowl combine soy sauce, garlic, onion, juice of 2 lemons, 7-UP, ground black pepper, dark brown sugar, and banana catsup. Using a whisk, mix and dissolve ingredients really well and pour marinade mixture onto the pork.
    • Cover and set in the fridge at least overnight or up to 2 days.
    • Barbecue over hot coals or gas grill until pork is done.

      Directions

      • Saute garlic, onion and tomatoes in 1 tbsp. oil in a medium heat pan. Cook until tomatoes turn soft.
      • After washing and draining chicken put it in the pan together with the sauteed garlic, onion and tomatoes.
      • Add salt and pepper according to taste.
      • Pour 1 cup water or chicken stock and cover pan and let simmer for 3 minutes.
      • Add potatoes and carrots together with tomato sauce. Cover pan until potatoes and carrots are tender.
      • Add milk and cheese (optional) and let it simmer for another 5 mimutes then serve.
      • Best served with steamed rice.

          What is Daing?

          Daing, Tuyô, or Bilad (literally “sun-dried” or “sun-baked”) refers to dried fish from the Philippines. Fish prepared as daing are usually split open (though they may be left whole), gutted, salted liberally, and then sun and air-dried. There are also “boneless” variants which fillets the fish before the drying process. It was originally a preservation technique, as salt inhibits the growth of bacteria, allowing fish to be stored for long periods of time.

          Daing na Bangus is very easy to prepare. It is so tasty that even little children will love it. It is better to have the fish deboned when buying in the market as milkfish is notorious for being bonier than other food fish.           Ingredients

          • 8 pcs. Boneless Bangus ( Milkfish ), butterflied with skin-on

          • 2 2/3 cup vinegar

          • 1 TBSP, 1 TSP salt

          • 1 TSP freshly ground black pepper

          • 16 cloves crushed garlic.

          • 1 cup, cooking oil

          Directions

          • Marinating Instructions:
          • Flatten Bangus with skin on top and place in baking pan (or any flat surface like baking pan)
          • Sprinkle the crushed garlic on all the Bangus surface
          • Now pour in vinegar, then season with pepper and salt.
          • Safely cover and narinate Bangus in the refrigerator overnight to get full flavor.
          • To Cook:
          • In a hot frying pan, add the 4 tbsps. of cooking oil and heat till it just starts to smoke over medium-high heat.
          • Place the Bangus fillet, skinside down.
          • Lower heat to medium and cook uncovered about 4 minutes each side.
          • Brown the marinade garlic and place it on top of the bangus.
          • Serve Daing na Bangus with rice, and atchara.

            Pandesal or pan de sal (Filipino and Spanish for “salt bread”), is a common bread roll in the Philippines. It is made of flour, eggs, yeast, sugar and salt. Pan de sal is a popular yeast-raised bread in the Philippines. Individual loaves are shaped by rolling the dough into long logs (bastón, Spanish for “stick”) which are rolled in fine bread crumbs. These are then portioned, allowed to rise, and baked. It is most commonly served hot and may be eaten as is, or dipped in coffee, hot chocolate or milk. It can also be complemented with butter, margarine, cheese, jam, peanut butter, chocolate spread, or other fillings like eggs, sardines and meat. Its taste and texture closely resemble those of the Puerto Rican bread pan de agua, French baguette, and Mexican bolillos. Contrary to its name, pan de sal tastes slightly sweet rather than salty. Most bakeries bake pandesal in the morning for breakfast consumption, though some bake pandesal the whole day.

            Ingredients

            • 2 cups bread flour

            • 2 cups all-purpose flour

            • 1 tsp baking powder

            • 1 pouch rapid rise yeast

            • 1/2 cup white sugar

            • 5 tbsp melted butter

            • 1 1/4 cup fresh milk (lukewarm)

            • 1 cup bread crumbs

            • 1 tsp salt

            • 1 egg

            • 1 tbsp cooking oil

            Directions

            • In a bowl, combine the yeast, sugar, and milk. Stir until the yeast and sugar are fully dissolved. You can also use water instead of milk.
            • In the mixing bowl, combine the dry ingredients: flour, sugar, salt, and baking powder then mix well.
            • Add the egg, butter, cooking oil, and yeast-sugar-milk mixture in the mixing bowl with the dry ingredients then mix again until dough is formed. You can use your hands to effectively mix the ingredients.
            • In a flat surface, knead the dough until the texture becomes fine.
            • Mould the dough and put back in the mixing bowl, cover with damp cloth and let the dough rise for at least 45 minutes to 1 hour.
            • After the dough has risen, transfer to a lightly floured flat working surface.
            • Roll into a log then cut into four to six equal pieces.
            • Take another portion of the dough, roll again into a log and cut into equal pieces, repeat this step until all the dough is done.
            • Roll each piece of dough in breadcrumbs then arrange on a baking tray for at least an inch apart (so it won’t stick together when it rises later on).
            • Leave the dough in the tray to rise again for 15 to 20 minutes.
            • Pre-heat the oven at 190°C (375°F) for 10 minutes. If using a fan assisted oven, reduce the heat according to the user’s manual.
            • Bake for 20 to 25 minutes or until nicely browned outside.
            • Enjoy with different “palaman” like Peanut Butter.

            What is Carbonara?

            Carbonara is an Italian pasta dish from Rome made with egg, hard cheese, cured pork, and black pepper. The dish arrived at its modern form, with its current name, in the middle of the 20th century.
            The cheese is usually Pecorino Romano, Parmigiano-Reggiano, or a combination of the two. Spaghetti is the most common pasta, but fettuccine, rigatoni, linguine, or bucatini are also used. Normally guanciale or pancetta are used for the meat component, but lardons of smoked bacon are a common substitute outside Italy.

            • 500 g Fettuccine noodles (or any desired pasta)

            • 200 g sweet ham

            • 200 g bacon

            • 1 can evaporated milk

            • 250 ml all-purpose cream

            • 1 can cream of mushroom soup

            • 1 head garlic, minced

            • 1 onion, minced

            • 1 tsp ground pepper

            • 2 tbsp olive oil

            • 250 g grated Parmesan cheese

            • 2 tbsp parsley, chopped (optional)

            Directions

            • Prepare the fettuccine pasta based on cooking instructions and set aside.
            • Fry the bacon (not too crispy). Drain (you may use paper towel) then cut into small pieces. Set aside.
            • Fry the ham. Drain (you may use paper towel) then cut into small square pieces. Set aside.
            • Heat oil and saute garlic and onion in a pan.
            • Add 3/4 of fried bacon and ham.
            • Add the evaporated milk and cream of mushroom soup.
            • Add the all-purpose cream and grated parmesan cheese. Stir and bring to boil.
            • Season with ground pepper.
            • Add more evaporated milk or a cup of water if the sauce is too creamy or salty.
            • Simmer until it begins to thicken. Remove from heat.
            • Place the pasta and sauce on a pasta tray.
            • Top with grated Parmesan cheese together with the remaining bacon and ham bits.
            • Add chopped parsley (optional).
            • Serve with garlic bread. Enjoy!

            Lechen Flan is a favorite Filipino dessert. It is almost always present in special occasions like town fiestas.

            What is Leche Flan?

            Leche Flan is a variation of Creme Caramel, a custard dessert with a layer of clear caramel sauce.

            In the Philippines, flan is known as leche flan (the local term for the originally Spanish flan de leche, literally “milk flan”), which is a heavier version of the Spanish dish, made with condensed milk and more egg yolks. Leche flan is usually steamed over an open flame or stove top in an oval-shaped tin mold known as llanera (also spelled lyanera), although rarely it can also be baked. Leche flan is a staple dessert in celebratory feasts.
            An even heavier version, called tocino de cielo or tocino del cielo (Spanish for “heaven’s bacon”), is similar, but has significantly more egg yolks and sugar.
            Leche flan is also commonly baked into pastries. The most common is the Filipino dessert flan cake or leche flan cake, a Filipino chiffon or sponge cake with a layer of leche flan on top. It can similarly be baked into steamed cupcakes known as puto mamón, a combination known as puto flan.

            Leche Flan is a variation of Creme Caramel, a custard dessert with a layer of clear caramel sauce.

            Ingredients

            • For the Flan:
            • 12 egg yolks, beaten

            • 1 can  evaporated milk (or whole milk), (354 mL)

            • 1 can condensed milk, (410 mL)

            • 1/2 cup sugar

            • 1/4 tsp vanilla extract

            • water (for steaming)

            • For the Caramel:
            • 3 tbsp water

            • 1 cup light brown sugar

            Directions

            • Prepare individual llanera (or two 9 x 2 in flan molds) and set aside.
            • Start by preparing the caramel. In a saucepan, bring the water to a boil then reduce low heat before adding the sugar.
            • Stir continuously for about 2 minutes or until the sugar caramelizes or turns amber.
            • Immediately pour the caramelized sugar into prepared individual flan molds. Evenly spread the caramel in the molds. Set the molds aside.
            • Prepare the steamer. Place a steamer in a large saucepan or a wok. Pour in water to just below the steamer and bring to boil.
            • In a separate bowl, combine evaporated milk, condensed milk, sugar and vanilla.
            • Gently pass the beaten eggs through a strainer into the bowl.
            • Stir to combine and mix thoroughly.
            • Pour the mixture into the prepared flan molds containing the caramel.
            • Cover the molds with aluminum foil, arrange into the steamer (water should already boiling before placing the molds inside) and steam for 30 minutes or until firm.
            • Set aside to cool and then refrigerate for at least 2 hours.

            Notes

            • Run a knife along the edges of the flan molds to loosen. Turn the molds over onto a platter or individual plates. The flan should come out easily with the caramel on top.
