  • 1 cup (140 g / 4.9 oz) cornmeal

  • 1 cup (140 g / 4.9 oz) all-purpose flour

  • 4 tsp baking powder

  • ½ tsp salt

  • 1 cup (250 ml / 8.5 fl oz) milk

  • 1 ea. (50 g) egg

  • ¼ cup (60 g / 2.1 oz) shortening, melted

  • ¼ cup (55 g / 1.9 oz) sugar (optional)

  • ½ of a 15-ounce (430 g) can of whole corn kernels, drained (optional)

  • ¼ ea. onion, finely chopped (optional)

Directions

  • Preheat oven to 425 °F (218 °C). Grease an 8-inch (20 cm) baking pan.
  • Combine cornmeal, flour, baking powder, salt, and sugar in a large mixing bowl.
  • Add egg, milk, and shortening.
  • Beat until fairly smooth (about a minute).
  • If using corn and/or onion, fold in these ingredients.
  • Pour the mixture into the baking pan.
  • Bake for 20–25 minutes or until a toothpick inserted in the center comes out clean. If corn is added to the batter, increase the time by ~50%
  • Serve hot!

  • Lettuce, washed and shredded, torn, or in whole leaves

  • Ripe tomato, sliced into thin disks

  • 2 slices of any type of bread

  • Sandwich spread or condiments (e.g., butter, margarine, mayonnaise, cream cheese, or mustard, although mayonnaise is traditional)

  • Ground black pepper, if desired

Directions

  • Toast the 2 slices of bread.
  • While the bread is toasting, broil or fry the bacon until crisp, taking care not to burn it.
  • Once the toasted bread is ready, spread with desired condiments.
  • Layer one slice of toast with the lettuce, tomato slices, and bacon. Add black pepper as desired. Top with other slice of toast.

  • Add ham, turkey and Swiss cheese for a BLT club sandwich.

  • Wrap the dough in a damp muslin cloth and leave it to rise for 2–3 hours.

Kaldereta or Caldereta is originally a goat meat stew. It originated from the Philippines. Over the years, variants of the dish have used beef, chicken, or pork.

Commonly, the meat is stewed with vegetables, liver paste and tomato sauce. The easiest way to re-create the liver paste is to use canned liver spread.

Caldereta is derived from the Spanish word caldera which means cauldron. The dish is similar to meat stews from Spain and Portugal which was brought to the Philippines by the Spaniards during their occupation. Over the years, it has transformed into a uniquely Filipino dish.

Kaldereta also has similarities with afritada and mechado.

Kaldereta is usually served during festivities. It is also a preferred pulutan (food or dish prepared for a drinking session).

Ingredients

  • 1/2 cup bell pepper, green, cut into 1 x 1-inch cubes

  • 1/2 cup bell pepper, red, cut into 1 x 1-inch cubes

  • 1 cup potato, cut into chunks then fried

  • Bola-Bola:
  • 300 g ground pork

  • 2/3 cup bread crumbs

  • 1 pc egg

  • 1/3 cup red onion, chopped

  • 2 Tbsp soy sauce

  • Kaldereta Sauce:
  • 2 Tbsp oil

  • 1 Tbsp garlic, minced

  • 1/4 cup liver spread

  • 1 pouch DEL MONTE Filipino Style Tomato Sauce (250g)

  • 2 Tbsp soy sauce

  • 1/2 cup water

Directions

  • Mix ground pork, bread crumbs, egg, onion, and soy sauce together until well incorporated then form every 1 tablespoon of the bola-bola mixture into balls.
  • For the Kaldereta Sauce: In a pan, sauté the garlic in oil until aromatic. Add the liver spread then sauté for 1 minute. Add the DEL MONTE Filipino Style Tomato Sauce, soy sauce, and water. Add the balls then let it simmer covered until balls are cooked.
  • Turn the heat off then add the green and red bell pepper. Cover for another 3 minutes. Serve with fried potatoes.
