  • 5 eggs, beaten

  • 1/2 kilo ground pork

  • 2 pcs small red bell pepper, diced

  • 2 tbsp cilantro (wansoy), chopped

  • 2 pcs small red onion, diced

  • 5 cloves garlic, minced

  • 3 medium potatoes, diced

  • 2 tbsp vegetable oil

  • salt and pepper to taste

  • banana ketchup (for dipping)

Directions

  • Place beaten eggs in a bowl, set them aside.
  • Pour oil in a non-stick frying pan over high heat.
  • Add diced potatoes and heat until golden brown.
  • Add the garlic and onions. Continue to fry until onion is cooked.
  • Add salt and pepper.
  • Add ground pork and cook until it is golden brown.
  • Add bell pepper and cook for one more minute.
  • Add chopped cilantro (wansoy) and mix with the rest of the ingredients.
  • When cooked, transfer the meat mixture into the bowl with beaten eggs.
  • Mix well the cooked meat and beaten eggs.
  • Scoop about 3 tbsp of the meat and egg mixture in the pan.
  • Fry each side of the tortang giniling until golden brown.
  • Repeat the process until you used up all your ingredients.
  • Serve hot with ketchup.

This Bopis Recipe is a spicy Filipino dish of pork lungs and heart sautéed in chilies, and onions.

This spicy Filipino dish has Spanish origins, but the meaning in its original language, and even region of origin, are now lost.

It is sauteed and stir-fried (until crispy) with finely-chopped pig innards and cooked in onion, garlic, and pepper.

Bopis recipes may differ from region to region and from family to family, with regard to ingredients, spices, and flavoring.

Classified as pulutan in Filipino cuisine, bopis is served with alcoholic beverages preferably beer. Bopis is also served as a main dish with rice.

NOTE: This bopis recipe is not ideal for people who suffer from rheumatism because of its high uric acid content.

Ingredients

  • 1/4 Kg pork heart

  • 1/2 Kg pork lungs

  • 1/4 Kg pork fat, skin on

  • 8 cloves garlic, minced

  • 1 large onion, minced

  • 4 pcs bay leaves

  • 2 large red capsicums, finely diced

  • 1 small carrot, minced

  • 2 cups vinegar

  • 1 cup stock (from the boiled meat)

  • 1 tbsp red chili pepper, chopped

  • 1 tbsp atsuete/annatto powder, dissolved in 3 tbsp water

  • 1 tbsp patis (fish sauce)

  • salt, to taste

  • freshly ground black pepper

  • atsuete/annatto oil (or cooking oil)

  • Garnish (optional)
  • 2 siling haba (green chili), sliced

  • red chili peppers

  • onions, chopped

Directions

  • In a large pot, add pork fat, heart and lungs, pour 1 cup of vinegar, 1 tbsp salt and enough water to cover the meat. Cook and let it boil for 20 minutes.
  • Once cool, drain meat from water and chop the meat finely. Set aside.
  • Heat annato oil in a pan and saute garlic and onions.
  • Toss the meat and stir fry for 3 minutes. Season with chili pepper and add some bay leaves.
  • Add capsicum and carrots, 1 cup of vinegar, and stock, then let it boil and simmer in high heat until sauce thickens and the meat gets slightly toasted.
  • Pour annatto powder mixture then add fish sauce to taste and sprinkle with freshly ground black pepper. Mix well to incorporate the seasoning. Turn off heat.
  • Garnish with thinly sliced siling haba, red chili and sliced onions (optional).
  • Serve hot and enjoy!

Halabos (also spelled halbus, hablos, or halbos) is a verb meaning “to scald in saltwater” in the Tagalog language.

Halabos is one of the easiest and most common way of preparing crustacean dishes in the Philippines. Traditionally, it only requires boiling whole unshelled shrimp, crab, or other crustaceans in water and a little salt for one to three minutes until they turn reddish-pink. Nothing else is added, and the ingredients are allowed to stew in their own juices. However, modern versions generally use carbonated lemon drinks like Sprite instead of water. Spices may also be added like chilis and garlic. Butter may also be added.

Halabos dishes are usually prefixed by “halabos na”. Examples of halabos dishes include halabos na hipon or halabos na sugpo (shrimp or prawns), halabos na alimango (mud crab), halabos na alimasag (blue swimmer crab), and halabos na ulang (lobster or giant river prawns). A specialty in Zamboanga is halabos na curacha which is made from curacha (the spanner crab, Ranina ranina).

  • 1 Kilo Shrimps

  • 3 tbsp salt

  • 6 cups water

  • cooking oil for sauteing

  • For the Dipping Sauce:
  • 4 tbsp Vinegar

  • 1 tsp Salt

  • Siling Labuyo / Chili (optional)

Directions

  • In a wok, bring water to a boil.
  • Add salt and shrimps. Cook for 3-5 minutes.
  • Remove the shrimps from the water.
  • In a separate pan, fry the shrimps at least 2 minutes on both sides.
  • Serve with dipping sauce. Enjoy!

Ingredients

  • 4 pieces fleshy fish (lapulapu, red snapper, carp)

  • 1 tbsp, 1 tsp salt

  • 1 tbsp, 1 tsp pepper

  • enough flour to dredge the fish in

  • 1 tbsp, 1 tsp minced garlic

  • 1/4 cup ginger (cut into thin strips)

  • 2 cups sliced onions

  • 4 cups red and green bell peppers (cut into strips)

  • 1/2 cup canola oil

  • 8 cups water

  • 1 cup vinegar

  • 1 cup brown sugar

  • 1/2 cup soy sauce

  • 1/2 cup cornstarch

Directions

  • Rub the fish with salt and pepper.
  • Dredge fish with flour and then deep-fry in very hot oil. Set aside.
  • In a skillet, lightly saute garlic, ginger, onions, and bell peppers in oil. Set aside.
  • In a pan, mix together water, vinegar, sugar, soy sauce, corn starch, salt, and pepper. Simmer for about 5 minutes or until the starch is cooked and thickens the mixture.
  • Simmer mixture for about 5 minutes or until the starch is cooked and thickens the mixture.
  • Place the fish on a platter and pour over it the sauce prepared in step 4.
  • Arrange the sauteed ginger, onions, and peppers on top of the fish and serve.

Pork Embutido or embotido, is a Philippine meatloaf made with ground pork and stuffed with hard-boiled eggs and sliced ham or various sausages. It is traditionally wrapped in aluminum foil and steamed, though it can also be baked. Embutido is commonly prepared during Christmas, fiestas, and other special occasions. It can be served hot or chilled, and is usually dipped in banana ketchup or some other type of sweet sauce. Despite the Spanish name, the dish is derived from the American meatloaf. The dish is usually anglicized as Filipino meatloaf.

  • 400 grams ground pork

  • 2 raw eggs, beaten

  • 1 onion, finely chopped

  • 1/2 cup raisins

  • 4 pieces whole hotdog

  • 1 cup grated cheese

  • 2 hard boiled eggs, quartered

  • 1 cup carrots, grated

  • 3 tablespoons bread crumbs

  • Salt and pepper to taste

  • 1/2 cup condensed milk

  • 1 head garlic, finely chopped

  • 1/2 cup green peas

  • 1 cup flour

  • 1/2 cup cornstarch

  • 1/2 cup butter

  • Ketchup

  • Parsley for garnish

Directions

  • In a large bowl, combined all the ingredients except for the hard boiled eggs and hotdog.
  • Mix well, until blended.
  • Spread out half of the mixture on a sheet of aluminum foil (make sure the foil has at least 1 inch more than the meat mixture) into a shape of a rectangle.
  • Arrange the hotdog and hard boiled eggs on top.
  • Slowly roll up the end until it is a long tube.
  • Pinch the ends of the foil to make sure it is tightly sealed.
  • Place the roll in a steamer for one hour.
  • Let it rest for about 10 minutes. Chill.
  • Remove from wrapping before serving, serve with ketchup and with rice. Garnish with parsley.
  • NOTE: You can also fry if you want.

Ingredients

  • 1 whole pig’s leg (pata, about 3-4 lbs) cleaned

  • 6 pcs dried bay leaves

  • 2 tbsp whole peppercorn

  • 4-6 star anise (optional)

  • 6 tsp salt

  • 2 tsp ground black pepper

  • 2 to 3 tsp garlic powder

  • 1 tbsp leeks

  • 1 tbsp sili green

  • 12-15 cups water

  • 8-12 cups cooking oil

  • For the Sauce:
  • 2 tbsp brown sugar

  • 1 1/2 tbsp light soy sauce

  • 1 tsp dark soy sauce

  • 1/2 cup vinegar

  • 1/2 tsp sesame oil

  • 1/2 red finger chilli in diagonal slices

  • 2 shallots or half a red onion, chopped

  • 1 clove garlic, crushed

  • 1 tbsp shredded fresh ginger

Directions

  • Pour water in a cooking pot then let boil. Add dried bay leaves, whole peppercorns, star anise, leeks, green sili and 4 teaspoons of salt.
  • Add the whole pig’s legs in the cooking pot then simmer until the leg becomes tender (about 45 to 60 minutes). Remove the tender leg from the cooking pot and set aside until the temperature goes down.
  • Heat a clean large cooking pot (preferably with cover) and pour in cooking oil. When the oil becomes hot, deep fry the pork leg.
  • Continue cooking in medium heat until one side becomes crispy, and then cautiously flip the leg to crisp the other side.
  • Mix ingredients for the sauce.
  • Serve hot!
