  • Customizable: Adjust the sweetness and peppermint intensity to suit your taste.

Ingredients

To make this Peppermint Cold Brew, you’ll need:

Equipment

  • Milk frother (optional): Ideal for creating the perfect cold foam. If you don’t have one, don’t worry – you can still make this recipe by simply stirring the ingredients.

Instructions

  1. Prepare the Base: Start by pouring your cold brew into a glass filled with ice, leaving about an inch of space at the top. Stir in 1 1/2 tablespoons of peppermint syrup, saving the remaining syrup for the next step.
  2. Make the Cold Foam: In your milk frother, combine 1/2 tablespoon peppermint syrup, 1/4 teaspoon peppermint extract, and the peppermint mocha nutpods. Press the button for cold foam and let it work its magic. If you don’t have a frother, simply stir these ingredients directly into your cold brew from step 1.
  3. Assemble the Drink: Once the cold foam is ready, carefully pour it over your cold brew. Go slow to ensure it sits beautifully on top of the coffee. And there you have it – your Peppermint Cold Brew is ready to enjoy!

Tips for the Best Peppermint Cold Brew

  • Adjust the Sweetness: Add more or less peppermint syrup based on your preference.
  • Experiment with Creamers: If you don’t have peppermint mocha nutpods, try another flavored creamer or plain almond milk with a touch of cocoa powder.
  • Make It Decaf: Use decaffeinated cold brew for a late-night treat.

Ingredients You’ll Need

  1. Milk (1 cup or 250 ml): Choose your preferred type of milk, whether it’s dairy, almond, oat, or soy. The milk adds creaminess and richness to the drink.
  2. Water (½ cup or 125 ml): Helps dilute the coffee slightly for a perfectly balanced flavor.
  3. Ice Cubes (1 cup, plus extra for serving): Essential for that refreshing chill. You can add more ice cubes to your serving glasses if desired.
  4. Instant Coffee (2-3 teaspoons): Adjust the amount to your taste. Go for 2 teaspoons for a mild flavor or 3 for a bolder kick.
  5. Brown Sugar (2-3 teaspoons): Adds just the right amount of sweetness and a hint of caramel flavor. You can also substitute with honey, white sugar, or your favorite sweetener.

Quick and Easy Instructions

  1. Blend the Ingredients:
Combine the milk, water, ice cubes, instant coffee, and brown sugar in a blender or a hand blender beaker. Blend the mixture until it’s smooth and a frothy foam forms on top. Easy Bibingka Recipe

Bibingka is a traditional Filipino rice cake that holds a special place in the hearts of many, especially during the Christmas season.

Bibingka is a traditional Filipino rice cake that holds a special place in the hearts of many, especially during the Christmas season. Known for its soft, fluffy texture and subtle sweetness, it is typically enjoyed as a breakfast treat or merienda (afternoon snack), often paired with a hot cup of coffee or a warm drink.

Bibingka is traditionally made from a mixture of rice flour, coconut milk, and sugar, which is combined to create a smooth batter. This batter is then poured into a banana leaf-lined clay pot or pan, which imparts a distinctive aroma and flavor to the cake as it cooks. The use of banana leaves is a hallmark of bibingka, giving the cake its signature rustic appearance and slightly smoky taste.

The cooking process for bibingka is unique, involving a method where the cake is baked over and under hot coals. This traditional technique ensures even cooking, resulting in a cake that is perfectly cooked on the inside while developing a golden-brown crust on the outside. The texture of bibingka is often described as moist and tender, with a delicate crumb that melts in the mouth.

Once baked, bibingka is typically topped with a variety of ingredients that add both flavor and texture. Common toppings include grated coconut, butter, sugar, and slices of salted duck egg or cheese, which provide a savory contrast to the sweet base. These toppings not only enhance the flavor but also contribute to the visual appeal of the cake.

Bibingka is closely associated with the Filipino Christmas tradition of Simbang Gabi, a series of dawn masses held in the days leading up to Christmas. After attending mass, many Filipinos enjoy bibingka along with other traditional treats like puto bumbong. The aroma of freshly baked bibingka wafting through the cool morning air is a cherished part of the holiday experience.

Today, bibingka remains a beloved Filipino delicacy, enjoyed not only during the holiday season but throughout the year. Its unique combination of flavors, textures, and cultural significance makes it a timeless treat that continues to be passed down through generations.

Brown (Wholemeal) Chapati

Brown (Wholemeal) Chapati is a popular unleavened flatbread in South Asian cuisine, particularly in Indian and Pakistani households.

Brown (Wholemeal) Chapati is a popular unleavened flatbread in South Asian cuisine, particularly in Indian and Pakistani households. Made from whole wheat flour, this chapati is a healthier alternative to traditional white flour chapati, providing more fiber and nutrients.

Brown (Wholemeal) Chapati Description

Brown chapati is characterized by its slightly denser texture and nutty flavor, which comes from using whole wheat flour. The dough is prepared by mixing whole wheat flour with water, a pinch of salt, and a small amount of oil. This mixture is kneaded into a smooth, pliable dough, which is then divided into small balls. Each ball is rolled out into a thin, round flatbread.

Cooking brown chapati requires a hot, dry skillet or griddle, or a tawa. The rolled dough is placed on the heated tawa and cooked until brown spots appear on both sides. The chapati is often pressed down gently with a cloth or spatula to encourage it to puff up, creating a light and fluffy texture inside while remaining slightly crispy on the outside.

Brown chapati is a versatile bread that can be paired with a variety of dishes. It’s commonly served with curries, vegetables, and lentils, or used as a wrap for meats and other fillings. Its wholesome, hearty taste complements spicy and flavorful dishes, making it a staple in many diets.

The video below demonstrates how to make brown chapati:

The video demonstrates how to make brown chapati. The ingredients used are hot water, salt, cooking oil, and honey. To make the dough, flour is mixed with hot water, salt, oil, and honey in a bowl. The dough is then kneaded until smooth and left to rest covered for 30 minutes.

Once the dough has rested, it is rolled into balls and then flattened and rounded into individual chapatis. The chapatis are cooked one at a time on a hot tawa or griddle. Bubbles will form on the surface as it cooks, indicating it is time to flip the chapati over. The other side is cooked until brown spots appear.

The cooked chapatis are soft, puffed up and have a sweet fragrance coming from the honey that was added. In the end, the homemade brown chapatis are shown to be very soft and flaky having achieved the right consistency and taste from using honey instead of sugar. The maker declares them ready to serve and enjoy while the food is still hot.

Brown (Wholemeal) Chapati

Tips for Best Results

  • Resting the dough helps to relax the gluten, making the chapatis softer.
  • Ensure the tawa or skillet is hot enough before placing the chapati on it to achieve the best puffing and texture.
  • Use a gentle but firm touch when pressing the chapati to encourage puffing.

Nutritional Benefits

Wholemeal chapati is rich in dietary fiber, vitamins, and minerals. It is a healthier alternative to white flour bread, aiding in digestion and providing sustained energy. The use of whole wheat flour also helps to keep you fuller for longer, making it an excellent choice for a balanced diet.

Enjoy the wholesome goodness of brown (wholemeal) chapati with your meals, and savor its rich, nutty flavor that perfectly complements a variety of dishes.

Ginisang Ampalaya with Egg is a quintessential Filipino dish that combines the robust bitterness of ampalaya (bitter melon) with the savory richness of eggs. This dish is a staple in many Filipino households, celebrated for its simple preparation and health benefits. Ampalaya is known for its medicinal properties, including its potential to regulate blood sugar levels and boost the immune system.

The dish starts with thinly sliced ampalaya, which is typically soaked in salt water to reduce its inherent bitterness. This step is crucial for those who are not accustomed to the strong flavor of bitter melon. After soaking, the ampalaya is sautéed with a flavorful base of garlic, onions, and tomatoes. These ingredients add layers of flavor, balancing the bitterness with sweetness and acidity.

Once the vegetables are tender, beaten eggs are poured into the pan, creating a rich and creamy texture that envelops the ampalaya. The eggs not only add protein to the dish but also help to mellow out the bitterness of the bitter melon. The final touch is a seasoning of soy sauce or fish sauce, which enhances the savory depth of the dish and adds a hint of umami.

  • Season with soy sauce or fish sauce and ground black pepper to taste.
  • Mix everything thoroughly and adjust the seasoning if necessary.

Tips for Best Results

  • To further reduce bitterness, you can blanch the ampalaya slices in boiling water for a minute before soaking them in salt water.
