Ingredients

  • 1 whole pig’s leg (pata, about 3-4 lbs) cleaned

  • 6 pcs dried bay leaves

  • 2 tbsp whole peppercorn

  • 4-6 star anise (optional)

  • 6 tsp salt

  • 2 tsp ground black pepper

  • 2 to 3 tsp garlic powder

  • 1 tbsp leeks

  • 1 tbsp sili green

  • 12-15 cups water

  • 8-12 cups cooking oil

  • For the Sauce:
  • 2 tbsp brown sugar

  • 1 1/2 tbsp light soy sauce

  • 1 tsp dark soy sauce

  • 1/2 cup vinegar

  • 1/2 tsp sesame oil

  • 1/2 red finger chilli in diagonal slices

  • 2 shallots or half a red onion, chopped

  • 1 clove garlic, crushed

  • 1 tbsp shredded fresh ginger

Directions

  • Pour water in a cooking pot then let boil. Add dried bay leaves, whole peppercorns, star anise, leeks, green sili and 4 teaspoons of salt.
  • Add the whole pig’s legs in the cooking pot then simmer until the leg becomes tender (about 45 to 60 minutes). Remove the tender leg from the cooking pot and set aside until the temperature goes down.
  • Heat a clean large cooking pot (preferably with cover) and pour in cooking oil. When the oil becomes hot, deep fry the pork leg.
  • Continue cooking in medium heat until one side becomes crispy, and then cautiously flip the leg to crisp the other side.
  • Mix ingredients for the sauce.
  • Serve hot!

The chicken in the pastel recipe may be replaced with any kind of meat, including pork or duck.

There are many variations of the dish depending on the region. Filipino families even often have their own interpretations. In nearly every version of the dish, the main ingredients are diced chicken meat and sausages. Chorizo sausages are commonly used, but hot dogs or vienna sausages could be substituted for real sausage.

Filipinos often eat this dish with rice. Many Filipino foods have Spanish or Mexican roots but the influx of Chinese settlers inspired the use of rice in Filipino cooking.   • 1 piece Knorr Chicken Cube

  • 1 piece Chorizo de Bilbao sliced

  • 4 pieces hotdogs sliced

  • 1 piece potato cubed

  • 1 piece carrot sliced

  • 1 piece red bell pepper sliced

  • 1 piece green bell pepper sliced

  • 3/4 cup button mushroom sliced

  • 15 ounces all-purpose cream

  • 1/4 cup soy sauce

  • 1 piece lime

  • 1 piece onion chopped

  • 4 cloves garlic minced

  • 3/4 cup water

  • Salt and ground black pepper to taste

Directions

  • Combine chicken, soy sauce, and lime in a large bowl. Mix well. Marinate chicken for at least 30 minutes.
  • Heat oil in a cooking pot. Saute onion and garlic.
  • Once the onion softens, add the chorizo. Saute for 1 minute.
  • Put chicken into the pot. Saute until the color turns light brown.
  • Add water. Let boil.
  • Add Knorr Chicken Cube. Stir. Cover and continue to cook for 20 minutes.
  • Put the sliced hotdogs into the pot. Cook in medium heat until the liquid reduces to half.
  • Add potato and carrot. Pour-in all-purpose cream. Cover and cook for 8 minutes.
  • Stir-in the mushroom and bell peppers. Stir. Cook for 3 minutes.
  • Season with ground black pepper and salt.
  • Transfer to a serving plate. Serve with warm rice. Share and enjoy!

Camaron Rebosado is a battered shrimp dish in Philippine cuisine that is deep-fried.

Ingredients

  • 2 kg medium-sized shrimp

  • 1/2 cup milk

  • 2 cups flour

  • 1/4 cup cornstarch

  • 1 TBSP salt

  • 8 eggs

  • 8 cups canola oil

Directions

  • Wash shrimp then peel and devein it.
  • Extract juice from lemon then marinate the shrimp in lemon juice for 20 minutes.
  • Combine flour, cornstarch, and salt in a mixing bowl then mix well.
  • Add the eggs and milk. Stir until all the ingredients are well distributed.
  • Heat a frying pan and then pour the cooking oil.
  • When the oil is hot enough, turn the heat to low then dip a piece of shrimp in the batter. Leave the tail uncovered then deep-fry until the color of the outer part turns dark yellow and the texture becomes crispy.
  • Remove from the pan or fryer then place it in a plate with a paper towel to absorb excess oil from the Camaron Rebosado.
  • Serve Camaron Rebosado with Sweet Chili Sauce, or Tomato Catsup or mayonnaise with finely chopped garlic.

  • 1/2 Kilo pork lungs

  • 1/2 Kilo pork heart

  • 5 cups of radish (labanos) (cubed)

  • 2 large bell pepper (diced)

  • 2 medium size onion (chopped)

  • 6 medium size tomato (diced)

  • 2 medium carrot (diced)

  • 1 cup vinegar

  • 1/4 cup annatto powder

  • 8 cloves garlic (chopped)

  • 8 siling (hot chili) labuyo (sliced)

  • 1 tsp paprika (optional)

  • 4 pcs bay leaf

  • canola oil

  • salt or fish sauce (patis) to taste

  • pepper to taste

  • Broth

Directions

  • Rinse pork heart and lungs, boil for 35-45 minutes or until tender.
  • Cut pork heart lungs into small cubes (ideally the same cut as for the radish).
  • Heat oil and saute garlic, onion tomato, add bay leaf and paprika.
  • Add pork lungs and heart, pour vinegar (do not stir).
  • Lower heat to low until vinegar is cooked (taste sauce if vinegar is cooked).
  • Add radish, carrots, red bell pepper, chili, pepper and salt or patis.
  • Add the broth, cover and simmer until desired amount of sauce.

    • 1 Kilo pork butt or belly (if using pork belly remove the skin)

    • 1 Cup soy sauce

    • 1 whole garlic peeled & smashed

    • 1 small onion, minced

    • 2 lemons

    • 1/2 Cup of 7-UP

    • 1 TSP ground black pepper

    • 5 TBSP dark brown sugar

    • 1 Cup banana catsup

    Directions

    • Soak bamboo skewers in water overnight to avoid splitting and burning before using.
    • Cut pork into ½ thick x 1 inch wide x 1 ½ inch long pieces.
    • Slide pork onto skewers and set aside.
    • In a large bowl combine soy sauce, garlic, onion, juice of 2 lemons, 7-UP, ground black pepper, dark brown sugar, and banana catsup. Using a whisk, mix and dissolve ingredients really well and pour marinade mixture onto the pork.
    • Cover and set in the fridge at least overnight or up to 2 days.

        Here is an easy pritong tawilis (fried sardinella) recipe that you could easily replicate at home.

        Pritong tawilis is a perfect side-dish with other foods although you can also consider it as a main dish. It may be eaten also as a pulutan (finger food when having drinks with friends).

        Whenever me and the family head over to Tagaytay City to eat our favorite bulalo, we always order a side dish of pritong tawilis.

        What is Tawilis?

        Sardinella tawilis (the freshwater sardinella, freshwater herring, or bombon sardine), is a freshwater sardine found exclusively in the Philippines. It is the only member of the genus Sardinella known to exist entirely in fresh water. Locally, they are known in Filipino as tawilis. S. tawilis is listed in the Ark of Taste international catalogue of endangered heritage foods of the Philippines by the Slow Food movement. In January 2019, the International Union for Conservation of Nature declared S. tawilis an endangered species.

        Ingredients

        • 1 kg tawilis

        • 1 cup all-purpose flour

        • 1 cup cornstarch

        • 1 cup water

        • salt & pepper

        • Canola oil for deep frying

        • For the dip:

        • vinegar

        • chopped onions

        • chopped garlic

        • red chili pepper (optional)

        Directions

        • Combine water, flour, and cornstarch. Mix well. Set aside batter.
        • Season tawilis with salt and pepper then dredge into the batter.
        • Deep fry until golden brown and crispy. Place fried tawilis on a platter covered with tissue paper to absorb excess oil

          This easy daing na bangus recipe is simply milkfish that has been marinated in vinegar with much garlic and then fried.

          What is Daing?

          Daing, Tuyô, or Bilad (literally “sun-dried” or “sun-baked”) refers to dried fish from the Philippines. Fish prepared as daing are usually split open (though they may be left whole), gutted, salted liberally, and then sun and air-dried. There are also “boneless” variants which fillets the fish before the drying process. It was originally a preservation technique, as salt inhibits the growth of bacteria, allowing fish to be stored for long periods of time.

          Daing na Bangus is very easy to prepare. It is so tasty that even little children will love it. It is better to have the fish deboned when buying in the market as milkfish is notorious for being bonier than other food fish. In the frozen section of most supermarkets, there is deboned milkfish labeled as “boneless bangus”, which helps to make this recipe a lot easier to prepare.

          This easy daing na bangus recipe is simply milkfish that has been marinated in vinegar with much garlic and then fried.

          Ingredients

          • 8 pcs. Boneless Bangus ( Milkfish ), butterflied with skin-on

          • 2 2/3 cup vinegar

          • 1 TBSP, 1 TSP salt

          • 1 TSP freshly ground black pepper

          • 16 cloves crushed garlic.

          • 1 cup, cooking oil

          Directions

          • Marinating Instructions:
          • Flatten Bangus with skin on top and place in baking pan (or any flat surface like baking pan)
          • Sprinkle the crushed garlic on all the Bangus surface
          • Now pour in vinegar, then season with pepper and salt.
          • Safely cover and narinate Bangus in the refrigerator overnight to get full flavor.
          • To Cook:
          • In a hot frying pan, add the 4 tbsps. of cooking oil and heat till it just starts to smoke over medium-high heat.
          • Place the Bangus fillet, skinside down.
          • Lower heat to medium and cook uncovered about 4 minutes each side.
          • Brown the marinade garlic and place it on top of the bangus.
          • Serve Daing na Bangus with rice, and atchara.

            This Easy Buttered Corn and Carrots Recipe is a favorite side dish. It takes less than 10 minutes to prepare and just 5 minutes to cook!

            Ingredients

            • 1 regular can (15 oz/420g) whole kernel corn

            • 1 medium sized carrot (cubed into small pieces)

            • 1 small red bell pepper (chopped), optional

            • 1 small onion (chopped)

            • 2 tbsp. butter

            • Salt & pepper to taste

            Directions

            • In a heated pan, melt the butter in medium heat.
            • Add the carrot cubes and cook for 1-2 minutes.
            • Add onion, corn, salt and pepper. Cook for another 2 minutes.
            • Add-in the bell pepper (optional).  Stir and cook for another 1 minute (medium heat).
            • Serve and enjoy your buttered corn & carrots!
