Egg Salad is one of the simplest side dishes or palaman (Filipino word for sandwich filling) you can make.

Ingredients

  • 8 (10–minute) hard boiled eggs (11 minutes if out of refrigerator)

  • ½ cup red sweet onions, diced

  • 3 garlic cloves, finely minced

  • 1 ½ tsp fresh ground black pepper

  • 1 cup mayonnaise

  • ¼ cup fresh basil, cut into strips

Directions

  • After boiling the eggs, chill in ice water for 5 minutes. Peel off the shells. Chop the eggs.
  • Mix all ingredients together.
  • Serve on bread or toast or have it as a side dish.
