  • 1 1/2 kilo pork pata (pork hock or trotters), cut into serving pieces

  • 1 cup vinegar (cane vinegar or coconut vinegar)

  • 1 cup water

  • 3 cloves garlic, minced

  • 1 onion, sliced

  • 2-3 pieces dried bay leaves

  • 1 tablespoon whole peppercorns

  • 2 tablespoons soy sauce

  • 1 tablespoon brown sugar (optional)

  • Salt to taste

  • Cooking oil

  • In a large pot, heat some oil and sauté the garlic and onions until fragrant.
  • Add the pork pata pieces and brown them on all sides.
